Anzac Biscuits

Makes 12
1 cup cake flour
1 cup desiccated coconut
2/3 cup brown sugar
1 cup Jungle oats
150g butter
1 Tsp golden syrup
½ Tsp bicarb
2 Tsp boiling water

Mix the flour, coconut, sugar and oats by hand
Melt the butter and syrup in a saucepan
Add the bicarb to the boiling water and mix well
Add this to the butter and syrup mixture
Add the wet to the dry ingredients
Shape into rounds and flatten with a fork
Place on a baking sheet
Bake at 160°C for 22 mins
