Artichoke and Cannelini Bean Salad Recipe

For 4 or 6
2 cloves garlic – peeled and crushed
4Tsp extra virgin olive oil
1lrg lemon – the juice and the zest
2Tsp mint – chopped
2Tsp parsley – chopped
600g artichokes – preferably the bottled type
400g cannellini beans – well drained and rinsed
175g feta – hand crumbled

Mix the garlic with olive oil, lemon juice and zest and herbs
Mix together the artichokes, beans and feta
Add the oil and herb mixture
Mix well and leave for at least 1 hour at room temperature
