Artichoke and Lemon Soup

Serves 4-6

  • 2lrg onions – peeled and chopped finely
  • 2 tins artichoke hearts (400g tins) –chopped – reserve the liquid
  • 3Tsp butter
  • 500ml single cream
  • 2 med potatoes – peeled, chopped and boiled
  • 2 cups vegetable stock
  • Salt and pepper
  • Juice of 1 lemon

Soften the onions and artichokes in the butter
Add the cream and cook for 20mins
Add the potatoes, stock and reserved artichoke liquid
Cook for 30mins
Blend and strain
Return to the pot and season
