Butternut and Apple Soup

Download the Butternut and Apple Soup recipe.

For 4-6
50g butter
2 lrg onions
1kg butternut – peeled and cut into chunks
1 tin of pie apples
1 Lit chicken stock
Thai green curry paste

Fry the onions in the butter until tender
Add the butternut and pie apples
Cook for 3mins
Add the chicken stock and cook for 40mins
Puree the mixture
Add Thai green curry paste to taste – approx. 2 lrg tsp
