Cauliflower Cheese with Swiss Chard and Walnuts

Download the Cauliflower Cheese with Swiss Chard and Walnuts recipe.

½ cup dry white wine
½ cup white wine vinegar
1 onion – finely chopped
1 Lt cream
1 cup strong cheddar
2 tsp Dijon mustard

Place the wine, vinegar and onion into a large pot and reduce to 2-3 Tsp
Add the cream and reduce to 500ml (custard consistency)
Add the cheese and mustard
Warm until the cheese has melted
Break 1 medium cauliflower into florets
Slice 3 Swiss chard leaves
Place the cauliflower and chard into a steamer and steam for 12 mins
Place the cauliflower and chard into serving dishes and flood with the sauce
Top with chopped parsley and walnuts
