Cherry-Almond Shortbread Biscuits

Makes 36

  • 1 cup butter – softened
  • 2/3 cup sugar
  • 1/2 tsp almond extract
  • 2 cups flour
  • 1/2 cup cherry jam

Beat the butter in an electric mixer and add the sugar and extract. Beat well
Beat in enough flour as you can and then use a wooden spoon to stir in the rest
Cover and chill for 1 hour
Shape dough into small balls and place on a baking sheet
Press your thumb into the biscuit to make an indentation in the centre of the biscuit
Spoon in 1/2 tsp jam
Bake for 10mins at 180°C
