Cleoberry Liqueur

Makes 2 bottles

2 Lit blackberry juice
900g sugar
1 Tsp grated nutmeg
2 Tsp whole cloves
400ml brandy

Crush the fresh blackberries to make up to 2 Lit
Place in a large saucepan with the sugar and bring to the boil
Remove any scum that may form on the top
Add the nutmeg and cloves and simmer for 15mins
Remove from the heat and add the brandy
Pour into a jug and cover the top tightly and set aside for 3 days
Sterilize and dry 2 bottles
Strain the liqueur through a piece of muslin
Pour into the bottles and seal with a cork
Leave for at least 1 month to mature
