Crumpets 5/5 (1)

150g self raising flour
1/4 tsp bicarb
2 Tsp castor sugar
1 egg
175ml milk
1 tsp lemon juice
1 Tsp oil

Sift the flour with the bicarb
Add the sugar
Mix the egg with the milk, lemon juice and oil
Leave the mixture for 30 mins
Heat a non-stick fry pan or griddle
Drop a spoonful of batter into the hot pan – repeat
When bubbles start to form turn the crumpet over to cook the other side briefly

Serve with maple syrup and bacon or honey and cinnamon

To make them savoury leave out the sugar and serve them with smoked salmon and horseradish sauce
