Freda’s Christmas Mincepies

Makes 12

125g butter
50g sugar
1 egg yolk
175g flour
Grated lemon rind
Christmas mincemeat

Cream the butter and the sugar
Add the egg yolk, flour and rind
Gather the dough together very gently in your hands and roll out thinly
Cut into rounds for the bases as well as angels, Christmas trees and stars
Place the rounds in the pie tins and add a spoonful of mincemeat
Cover with the angels, trees and stars
Bake for 10 mins at 180°C
Dust with castor sugar for a slight crunch
