100g fresh ginger – grated
1 cup molasses
1 cup sugar
1 cup oil
2  cups flour
1 tsp ground cinnamon
Half tsp ground cloves
Half tsp ground black pepper
1 cup water
2 tsp baking soda
2 eggs

Mix together the molasses, sugar, and oil
Sift the flour, cinnamon, cloves and black pepper together
Bring the water to the boil in a saucepan
Stir in the baking soda, and add the molasses mixture
Stir in the ginger
Gradually whisk the dry ingredients into the batter
Add the eggs, and continue mixing until everything is thoroughly combined
Line a cake tin with a circle of parchment paper
Pour the batter into the cake pan
Bake for about 1 hour at 180°C
