Lime and Yoghurt Cake

2 limes
4Tsp Greek yoghurt
4Tsp double cream
1 egg
2tsp baking powder
250g flour
8Tsp sunflower oil
4Tsp masala wine
225g castor sugar

Grate the rind of the limes into a processor bowl and squeeze in the juice of 1 of the limes into the bowl

Add all the remaining ingredients into the processor bowl and process for 30 secs until all the ingredients are well mixed

Line the base of a 23cm cake tin with paper

Pour the mixture into the tin

Bake at 200°C for 35 mins until a skewer comes out cleanly

Serve warm with Greek yoghurt and a berry preserve
