Prawn and Orange salad

Download Prawn and Orange salad recipe.

Serves : 4 – 6

  • ½ Kg medium prawns – peeled
  • 2 oranges – peeled and sliced
  • 1 med red onion – thinly sliced
  • 1 chilli – finely chopped
  • Salad and herb leaves and flowers (as many colours as you can find)

Steam the prawns
Arrange all the ingredients onto a plate and drizzle over the dressing

Dressing

  • 1lrg egg
  • 1 cup sunflower oil
  • ¼ cup white wine vinegar
  • 2 cloves garlic
  • ½ tsp salt
  • 2tsp castor sugar
  • 1 cup basil leaves

Place all the ingredients into a processor and process for 20secs
