SUMMER BERRY ZABAGLIONE

Serves 6

6 Egg yolks
90g Castor sugar
150ml Marsala or dessert wine of choice
500g Fresh mixed henries

Whisk the yolks and the sugar in a heatproof bowl until foamy and pale
Set the bowl over a pan of simmering water
Whisk constantly, adding the Marsala a little at a time, until the mixture begins to thicken
Continue whisking until the mixture is thick enough to leave a ribbon trail
Do not overheat the mixture or it will separate
Arrange the fnuit on a plate, pour the zabaglione over the top, allowing a few of the berries to show through the sauce
Grill until caramelized
