HOMEMADE AIOLI

2 egg yolks
500ml sunflower oil
1 Tbsp castor sugar
1/2 tsp salt
1 tsp mustard powder
white pepper
3 Tbsp lemon juice
2 Tbsp white wine vinegar
4 crushed garlic doves

Place all the ingredients, except the oil and the garlic, into the processor and briefly process.
With the motor spinning, gradually add the oil in a steady stream until th egg mixture emulsifies.
Add the garlic and process until completely blended
