South African Mielie Bread 5/5 (1)

Download South African Mielie Bread recipe.

1x 400g tin creamed sweetcorn – drained
3 eggs
1 tsp salt
2 tsp sugar
pinch of nutmeg
125ml buttermilk or yoghurt
125ml flour
1 tsp baking powder
Mix all the ingredients
Pour into a greased loaf tin
Bake for 1 hour at 180°C
Serve warm so the butter can melt into the slice!

Hi Richard, I’m looking for a good Mielie bread recipe to go on the Christmas table so when I saw one attached to “cleomountain” I knew that it could only mean you, and that it would be a good one! I’d like to use your recipe but I’m a bit confused by the ‘drained tin of sweetcorn’ because from my experience its not really liquid enough to drain without half the contents squishing out, or do you mean empty the tin into a colander and run water through it so you would only have the softened corn left?
    I do hope this message gets to you as I would really like to name drop at the Christmas table.
